Balushahi is an Indian dessert which has a soft and flaky texture , crisp from outside . In South India, the same is called Badusha.

INGREDIENTS
- Maida - 2 Cups
- Ghee - 1/2 Cup
- Curd - 1/4 Cup
- Sugar - 1 Cup
- Water -1/2 Cup
- Cardamom- 4
- Saffron- few strands
- Baking powder- 1/2 teaspoon
- Baking soda -1/2 teaspoon
- Salt - 1/4 teaspoon
- Oil / ghee - for frying
- Lemon juice - few drops
METHOD
In a large bowl add maida, baking powder, baking soda , salt and ghee and combine well.
Add curd and knead it gently until a soft dough is formed . Do not over knead the dough.
Cover and keep it aside for 20 minutes .
To prepare sugar syrup, Heat a pan on medium heat. Add sugar and water and mix them till sugar dissolves. Add crushed Cardamom and Saffron strands and mix them well. Boil it for 5 minutes.
Take the dough and make small portion from it. Gently roll it between palms to form ball. Flatten the ball slightly and make dent in the center.
Prepare rest of the dough and keep it aside.
Heat oil / ghee in low flame , deep fry them . Stir them occasionally and gently flip and fry on both sides till golden and crisp.
Remove from oil and soak them in sugar syrup for 2 minutes.
Do not soak for too long , as they become soggy .
Garnish with chopped pistachios.
