Tangdi/Tangri Kabab | Without Tandoor oven

Tangdi kabab are a popular restaurant style appetizer made with the chicken drumsticks, curd , cream and spices.
Tangdi literally translates to leg and kebab is a piece of grilled food. Tangdi/ Tangri kabab are grilled either oven , charcoal fire , tandoor oven or regular grill pan.
There are many varieties of recipes which vary from restaurant to restaurant. The common thing would be that they are mildly spiced , So they would look anywhere from pale white to light brown.







INGREDIENTS 

Chicken drumsticks - 500 grams

First marinade
  • Ginger garlic paste - 1 Tablespoon 
  • Salt - To taste 
  • Lemon juice -  Juice of half a lemon


Second Marinade
  • Yogurt - 1/2 Cup
  • Cream - 1/4 Cup
  • Corn flour - 1 Tablespoon
  • Green chilli chopped - 2 Tablespoon
  • Cheese - 1 cube (small)
  • Egg - 1 No 
  • Salt - to taste
  • Black pepper powder - 1 Tablespoon
  • Coriander leaves (chopped) - ½ Cup

FOR FRYING

  • cooking oil - 1 Tablespoon
  • Butter - 1 Tablespoon for basting

HOW TO MAKE TANGDI KABAB ON PAN

PREPARATION : FIRST MARINADE
Add ginger garlic paste , salt and lemon juice to a bowl and mix them .
Make deep incisions on the chicken drumsticks.
Add them into the marinade and rub it on the chicken drumsticks, keep it aside for 30 minutes

 Marination is the key to make succulent kababs .Chicken absorbs flavours and tenderises , which helps it to cook soft and succulent 













SECOND MARINADE
To another bowl, add yogurt , fresh cream , corn flour , chopped green chillies, egg , salt, black pepper powder , fresh coriander leaves chopped and grated cheese.
Mix them all together 
Add the marinade chicken pieces and combine everything well .

 Add hung curd for better texture of the kababs .













GRILLING/FRYING
Heat a grill pan on medium heat , add cooking oil , place the marinated 
drumsticks. Grill the chicken on both sides. 









Baste the chicken drumsticks with butter at regular intervals.












Serve the kababs with mint chutney, onions and fresh coriander and mint leaves.

  2. Oatmeal -  1/4 cup
  3. Chia seeds - 1/4 cup

  4. Honey - 2 teaspoon
  5. Water - as required

1. To make the smoothie , add all the ingredients to a blender and make a smooth puree with little water.

 Spaghetti aglio e olio pronounced as ah-li-oh eh oh-li-oh translate to "garlic and olive oil".
Aglio e olio is a traditional Italian dish basically prepared using spaghetti , garlic and olive oil. The original recipe doesn't include cheese , adding some cheese enhances the flavour and texture , parsley adds pop of colour. The secret to a creamy pasta dish is using extra virgin olive oil and the pasta water. The key is slowly toasting the garlic slices to a perfect golden brown in the olive oil.

INGREDIENTS


1. SPAGHETTI - 200 grams , thin noodles are the best for this recipe , they absorb sauce well and are easy to work with.

2.EXTRA VIRGIN OLIVE OIL - 3 Tablespoon, use the best quality olive oil as this is the key ingredient.

3. GARLIC - 4 to 5 cloves , add finely sliced garlic , you can increase or decrease the quantity.

4.RED CHILLY FLAKES - 1 Teaspoon , adds a little heat and colour to the dish.

5.GRATED PARMESAN - optional , adds great taste and creaminess to the dish.

6.SALT - to taste 

7. WATER - to boil the spaghetti.

8. PARSLEY - for garnish.

Prepare the pasta : Boil water in a large pot . Add enough salt. Cook the pasta according to the package instructions. Cook till al Dante . Reserve a cup of pasta cooked water .Strain the pasta and kept aside.

Prepare the sauce : In a saucepan , add extra virgin olive oil .Warm the oil in low heat , add the chopped garlic . Cook until the edges of the  garlic is golden brown. Do not brown the garlic. Stir regularly to prevent it from burning. Add red pepper flakes and saute for 30 seconds.

Add pasta to aglio e olio sauce : Add the cooked pasta to the sauce , add the reserved pasta water and toss to combine . Cook till the water is reduced. Add the chopped parsley and cook for 2 minutes.Turn of the heat and add grated parmesan and parsley to garnish.

In a kadai , heat coconut oil , add whole spices . Once they turn aromatic add chopped onion . Sauce till the onion turn transparent. 
Add ginger garlic paste and sauce till the raw smell goes away.

Pineapple curry / gujju



 Pineapple gojju recipe is a sweet and spicy , tangy curry made using pineapples, prepared during wedding and other celebrations in Karnataka. It is best served with hot steamed rice.

PINEAPPLE - 1 CUP
GREEN CHILLY - 3 SPLIT
SESAME SEEDS- 2 TABLESPOON
SPLIT CHICK PEAS - 1 TABLESPOON
FENUGREEK SEEDS- 1 TEASPOON
DRIED RED CHILLY - 9 NO'S
CURRY LEAVES -FEW
JAGGERY - 2 TABLESPOON
TURMERIC POWDER - 1 TEASPOON
SALT - TO TASTE
COCONUT - 1/2 CUP GRATED
WATER - 1 CUP
COCONUT OIL - 2 TABLESPOON
MUSTARD SEEDS - 1 TEASPOON
DRIED RED CHILLY - 3 NO'S



METHOD

Dry roast sesame seeds and keep it aside.

Add coconut oil to the same pan , add fenugreek seeds, split chick pea ,dried red chillies and curry leaves. Fry them till they turn aromatic.

Switch off the flame , cool them completely and transfer into a blender jar.

Add roasted sesame seeds and grated coconut to the same blender , add water and grind them into a smooth paste.

In a kadai , boil half cup of water , add the chopped pineapple , split green chilly and close the lid and cook for 10 minutes. 

Add turmeric powder , jaggery and salt to taste .

 Add the ground coconut spice paste , add required amount of water and adjust the consistency of the gravy.

Simmer for 10 minutes. 

For the tempering , heat coconut oil in a pan .Add mustard seeds, dried red chilly and curry leaves and pour on top of the gravy.
