MUTTON PEPPER FRY
Mutton pepper fry is a simple and flavourful dish cooked with roasted spices and pepper .
INGREDIENTS
- Mutton - 1 kg
- Salt - to taste
- Coriander powder - 2 Tablespoon
- Red chilly powder - 2 Table spoon
- Ginger garlic paste - 1 Table spoon
- Turmeric powder - 1 Teaspoon
- Lemon juice - 2 Tablespoon
- Water - 1/8th cup
- Fennel seeds - 1 Teaspoon
- Black pepper - 4 Tablespoon
- Coconut oil - 2 Tablespoon
- Shallots - 2 cups
- Coriander leaves - 1 hand ful
- Whole spices Cardamom - 1 , cloves -3 , cinnamon - 1 " stick
METHOD :
1. Clean and cut the mutton into small pieces. To a pressure cooker , add mutton pieces, salt, coriander powder, red chilly powder, turmeric powder , ginger garlic paste , juice of half a lemon and 1/8 th cup of water. Don’t add more water , mutton release enough water during cooking.
2. Combine everything well and close the lid, pressure cook for 3-4 whistles or until the mutton is well cooked.
3. Heat a pan , add whole spices, cumin seeds, fennel seeds , black pepper corns and curry leaves and dry roast till the spices turns aromatic and curry leaves became crispy.
4. Cook and grind the spices into fine powder keep it aside.
5. Heat a pan, add coconut oil , shallots and sauté till they turns soft. Add the cooked mutton and combine well. Add chopped coriander leaves and mix well .
6. Serve hot with rice or roti.
